Phat Patties was founded by Ramona Schatzer, a creative entrepreneur with a passion for building bold brands and unforgettable experiences. Her vision was simple: create a never-before-done-before burger concept that feels exciting and indulgent, yet healthy and accessible.

Ramona is proudly supported by—and partnered with—husband and wife duo Angel Mariotti and Jason Olcese, longtime collaborators and creative operators known for building high-energy, culture-driven concepts across food, music, and art. With deep experience in brand strategy, marketing, creative direction, and operations, Angel and Jason help shape everything from the guest experience to the systems that support sustainable growth.

Behind the menu is husband and wife team Austin Harrell and Caryn Coblio-Harrell, bringing culinary expertise and design-driven thinking to Phat Patties.

Austin Harrell is a classically trained chef and Founder of Ragin Cajun on Wheels, with an extensive background as an Executive Chef in both fine-dining and high-volume concepts, including Parkers’ Lighthouse, Red O by Rick Bayless, and Wildfish Restaurant. His approach blends bold flavors with disciplined technique to create craveable, intentional burgers.

Caryn Coblio-Harrell is an entrepreneur, artist, and industrial designer whose background in product, packaging, and environmental design influences how the menu comes together visually and experientially. Her creative lens helps ensure each item feels as good as it tastes.
